Back to the future is the motto of this year's iChefs, where three chefs from the Chef of the Year family - Enrico Back (Landhaus St. Urban, Naurath/Wald), Matthias Pietsch (Redüttchen Weinbar and Restaurant/die Redoute, Bonn) and Simon Stirnal (Hotel Kronenschlösschen, Eltville am Rhein) - meet with the task of placing traditional cooking techniques back in the foreground. Whether it's fermenting, curing or cooking - classic meat and fish preparation is always in fashion.
The dishes are accompanied by wines from Ômina Romana.
