Organic Forum - Public procurement and cooking -Booster for organic?

Italy and Denmark paved the way for organic food in their state canteens about 15 years ago. In Denmark, the level of organic supply in out-of-home catering is now around 60 per cent, and this is normality even in the morning at hotel breakfasts. France, Austria and Germany all want to follow suit. The Commission on the Future of Agriculture set up in Germany recommends to the federal government the massive use of organic food in public institutions. This is also to sweep along factory canteens, hospitals and the entire catering industry. The new organic legislation in Germany specifically promotes organic food in the out-of-home sector in order to make it easier for farmers to convert to organic farming with market incentives.
