Dr. Verónica García Arteaga is the Founder, CEO & CTO of Neggst Foods, the company that created the world’s first fully functional plant-based raw egg… complete with yolk, white, and shell.
With a PhD in plant proteins, a deep curiosity about food innovation and production and a desired to reduced her animal consumption, she was wondering what seemed almost impossible: could the egg, one of the most versatile and (her) beloved foods, be recreated entirely from plants without losing its functionality, taste, or cultural significance?
Answering that question became her mission. Against scientific, technical, and industry hurdles, Verónica and her team built what many thought couldn’t be done: a scalable, patent-backed alternative to the chicken egg, one that delivers on nutrition, functionality, and sustainability.
Today, she leads Neggst Foods not only as a company but as part of a global movement toward a food system that is delicious, ethical, and future-ready.
