Lesso La Valle is a high-quality cooked ham made from fresh legs of white pigs selected at source for the production of PDO prosciutto crudo. The ham is left to rest on the bone before deboning to tenderize the meat. It is processed without the use of churns, using manual salting in the artery and steam cooking at high temperatures. Lesso is a clean, honest cooked ham, with the sweet flavor of well-done pork (the name "Lesso" comes from the ancient Piedmontese tradition of boiling meat). It has a genuine appearance with good marbling in the lean meat. Free water content is less than 0.98.
