Varietal composition: Malagouzia 100%

Category: Protected Geographical Indication KOS

Vines: Average age 15 years old. 70% of raw material comes from clay-stony red soil, slate parent rock, while the rest 30% comes from sandy, limestone soil.  The management and the development of the ecosystem is entirely based on the Bio-Agricultural practices (the vineyard is under the process of certification)

Yield: average 1,05 tn/1.000 m2

Harvest period: 18-22nd August

Maturation and Cellaring: 60% of the wine remains for 4 months in a stainless-steel tank, while the rest 40% matures, for the same time span, in new, 225 -liters- capacity oak barrels . During this time periodic “batonnage” are carried out

 Ageing potential:  5 years

Analysis: 13.8% alc. by vol., residual sugars 2.1 g/l, total acidity 5.9 g/l in tartaric acid, pH 3.27

Serving temperature: 10-12°C

Recommended pairings: grilled fish and seafood, risotto with seafood, fish carpaccio, pasta with lobster, sushi-Japanese cuisine

Varietal composition: Assyrtiko 100%

Category: Protected Geographical Indication DODECANESE

Vines: Average age 17 years old. In this case, raw materials are evenly shared 50-50 between limestone and slate soil. The management and the development of the ecosystem is entirely based on the Bio-Agricultural practices (the vineyard is under the process of certification)

Yield: average 1,2 tn/1.000 m2

Harvest period: 27-30th August

Maturation and Cellaring: 1/3rd of total quantity matures for 6 months in stainless-steel tank, 1/3rd in sphere, cement tank and the remaining 1/3rd in new, 225 liters-capacity oak barrels

 Ageing potential:  8 years

Analysis: 14.3% alc. by vol., residual sugars 1.7 g/l, total acidity 6.1 g/l in tartaric acid, pH 3.22

Serving temperature: 11-13°C

Recommended pairings: seashells, seafood, big fat fish grilled, pasta with smoked trout or eel, lamb with egg-lemon sauce, roe.

Varietal composition: Sauvignon blanc 60% • Cabernet sauvignon 40%

Vines:  22 years old vine planted in stony-clay red soil of parental slate subsoil. The management and the development of the ecosystem is entirely based on Bio-Agricultural practices (the vineyard is under the process of certification)

Yield: average 0,9 tn/1.000 m2

Harvest period: Sauvignon blanc is harvested 20-23rd August, Cabernet sauvignon 29-30th August

Maturation: 2-3 months periodic “batonnage” of light wine lees in stainless steel tanks

Ageing potential:  3 years

Analysis: 13.4 % alc. by vol., residual sugars 1.4 g/l, total acidity 6.0 g/l in tartaric acid, pH 3.25

Serving temperature: 11-12°C

Recommended pairings: tuna and salmon remoulade, pasta with lobster, fried Norway lobster, spawns risotto, salads with fruity dressing, sushi
