About Prof. Dr. Ute Weisz
Ute Weisz is Professor of Plant Proteins & Nutrition at the Technical University of Munich (TUM, School of Life Sciences). She studied Food Technology at the University of Hohenheim, where she also obtained her doctorate in plant-based foods. In 2007 she joined the Fraunhofer IVV, where she held leading positions for many years. From 2021 to 2023 she was Professor of Food Science at the University of Bonn before taking over the newly established Chair of Plant Proteins & Nutrition at TUM in October 2023.
In addition, she mentors young scientists at Fraunhofer IVV and contributes her expertise to various scientific advisory boards.
Her research focuses on the extraction, modification, and characterization of plant raw materials with an emphasis on proteins, as well as on the development of functional ingredients for human nutrition – always embedded in interdisciplinary research with strong links to industrial application.
