After more than 10 years of fake meat and the lively exchange at many trade fairs and in our organic vegan burger restaurant “Bunte Burger” in Cologne, it is clear that fake meat has a right to exist, but a large number of consumers move away from fake meat products –for sustainability, health or taste reasons. Products from the food chemistry kit are accompanied by long lists of ingredients and artificial flavor enhancers and at the same time the nutritional values are often not ideal. Consumers are increasingly critical of this. In addition, the large group of flexitarians in particular reject meat imitations because they prefer to use animal meat products for meat taste. So where should the plant-based food market develop? In this lecture, the status quo will be examined and possible alternative solutions will be presented.
